Trail Estate Wild Ferment Riesling 2016, Lincoln Lakeshore, Niagara Peninsula, Ontario V.Q.A., Canada: A lovely, medium-bodied Riesling from Hillier in Prince Edward County. This off-dry style offers aromas of toasted apples, peach and pear. The wine was made using a wild fermentation in that the yeast used was local and wild, not a cultivated strain, which results in terroir-driven, local flavours and character. Pair with seafood.
