A lovely, medium-bodied Riesling from Hillier in Prince Edward County. This off-dry style offers aromas of toasted apples, peach and pear. The wine was made using a wild fermentation in that the yeast used was local and wild, not a cultivated strain, which results in terroir-driven, local flavours and character. Pair with seafood.

Riesling food pairings: baby greens salad, pork tenderloin, turkey breast, foie gras.
