Valdespino Inocente Fino Sherry, Jerez D.O., Spain: This non-vintage dated fino sherry offers lovely aromas of toasted almond on the nose and palate. Produced in the heart of the sherry region -- Jerez -- it's fermented in 600-litre American oak botas, which are very large casks. This requires an considerable amount of manual labour as compared to fermenting the wine in stainless steel tanks, especially when more than tens of thousands of kilos of grapes are involved. Cedar, chewy black cherry layers float happily on full-bodied weight. The Ripasso method takes leftover pomace from making Amarone wine and adds it to a Valpolicella wine to start a second fermentation and in doing so, adds alcohol, body, tannin and flavour to the final wine. Penfolds Bin 389 Cabernet Shiraz 2013, South Australia, Australia: A rich, complex, full-bodied red wine blend of 51% Cabernet and 49% Shiraz grapes from one of Australia's best producers. Black cherry liqueur aromas and flavours on the nose and mid-palate. The grapes are grown in Wrattonbully, Barossa, McLaren Vale, Langhorne Creek and Robe regions.
