This non-vintage dated fino sherry offers lovely aromas of toasted almond on the nose and palate. Produced in the heart of the sherry region -- Jerez -- it's fermented in 600-litre American oak botas, which are very large casks. This requires an considerable amount of manual labour as compared to fermenting the wine in stainless steel tanks, especially when more than tens of thousands of kilos of grapes are involved. It's well worth the effort though.

Valdespino became part of a much larger wine and spirits company called Grupo Estevez in 1999. The making of sherry is taken seriously here and sherry styles range from Finos to Manzanilla. Bodegas Valdespino has been in existence since 1264. The bodega came to be as a reward to Dona Afonso Valdespino, one of the knights who were involved in driving the Moors from Jerez. For this, he was given land in Jerez as a reward by Spain's then King James I of Aragon. - Community Wine Reviews
