Taittinger Nocturne Champagne, Champagne A.C., France: Toasty, bready and robust especially for a Champagne house known for the delicacy of its sparkling wines. This Champagne is a sparkling wine blend of 40% Chardonnay and 60% Pinot Noir and Pinot Meunier grapes. This is a special edition bottle of the Taittinger in purple glittering squares ("reflective tiles") meant to look like a disco ball. (It certainly does after several glasses of this bubbly.) The grapes are sourced from more than 30 different crus or villages and vineyards for the final blend: that's the magic of Champagne. This champagne has a slightly sweeter dosage than the regular bottles at 17.5 grams per litre and is combined is a long aging period in the winery's cellars to create a rich and robust bubbly ready for clubbing. Taittinger's Nocturne is matured for a minimum of 4 years before disgorgement (removing the dosage and sediment to put the final cork in) which creates richness and creaminess. Love this. H3 Columbia Crest Merlot 2013, Horse Heaven Hills, Washington State, United States: The difference between daytime and nighttime temperatures in this eastern Washington state wine region is the reason why Merlots like this one are terrific. In October, during the last weeks of the key ripening season before harvest the nighttime temperature can plummet from 35 degrees in the day to just 20 degrees at night which allows for ripening during the day but then the grapes stop in the night and preserve freshness and natural acidity. The great thing is that the grapes don't get over-ripe as in some warm climates where photosynthesis produces more sugar and therefore more alcohol. That's why Washington red wines are often a moderate 13% alcohol. This wine features aromas of dark spice, fleshy blackberry and smoke. Pair with roast beef. Shafer One Point Five Cabernet Sauvignon 2006, Stags Leap District, Napa Valley, California, United States: Vintages Wine Panel: This wine doesn’t have the detail of their famed Hillside Select, but it’s remarkably close in quality. The texture, that signal aspect of SLD fruit, is layered and as rich as French roast coffee, with an underlying tension that keeps the wine focused on high-toned red fruit, dark earth and violet scents. It’s powerful and guarded when first poured, growing sleek and classical with a day of air. This should drink increasingly well over the next ten years. WSP.
