Valdespino Inocente Single Vineyard Fino Dry Sherry, Jerez D.O., Spain: Inocente is a dry Fino Sherry produced from a single-vineyard, Macharnudo Alto, sourced from Palomino vines over 25 years of age in Albariza soils. Inocente is one of the only Fino wines fermented in 600 litre wooden casks using indigenous yeasts. A brandy produced from Palomino grapes is used for fortifying the sherry. Fine and briny on the nose with dried hay, toasted nut, yeasty and vanilla aromas. On the palate, the sherry is elegant with briny mineral flavours dried apple, citrus peel, olive and salted nut flavours. A great sherry. Enjoy chilled with Ibérico ham, olives and fish patés. Produced from sustainably grown grapes, this is a dry, medium-bodied red wine with fine-grained tannins. The wine is a collaboration with Ontario's Speck brothers (Henry of Pelham) and Bordeaux's Damien Chombart of Château Lamothe de Haux which dates back to the 1700s. Look for bright red plum, raspberry, cherry and cake baking spice flavours on this fruity red wine. Tannins are pleasantly chewy. Château Rouget 2016, Pomerol, Bordeaux A.C., France: From Pomerol in the Bordeaux wine region, Château Rouget 2016 is an elegant, polished and full-bodied 85% Merlot and 15% Cabernet Franc produced from organically grown grapes and is in the process for becoming biodynamic. This Chateau is situated between L'Eglise Clinet and Le Gay and The Labruyère family are the owners and producers of this silky-textured, beautiful Pomerol.
