From Twenty Mile Bench, Niagara Escarpment wine region, Flat Rock's 2020 "Riddled" is a traditional method bubble made from 100% Chardonnay and is fresh, crisp and creamy on the palate with a bright mousse of ripe apple, stone fruit, toast and citrus zest flavours. The name is a tribute to the process of making sparkling wine, especially the traditional way in Champagne, where bottles are turned periodically, or riddled, as they rest upside down on their lees (sediment) before disgorging that sediment and putting the final big cork in the bottle. The 2020 inaugural vintage scored 92 at the 2022 National Wine Awards of Canada. Drink or hold.

Flat Rock's 2020 "Riddled" is a traditional method bubble made from 100% Chardonnay. This is the inaugural vintage of this fresh, crisp and creamy bubble, bright with a leesy mousse of green apples, lemon juice, biscuit and toasty, spicy notes clean and lingering on the palate. The name is in recognition of the traditional way in making Champagne. Riddling or remuage is the process of turning bottles in small increments to loosen the sediment so that it collects in the bottleneck, gradually tilting it so that it is "neck-down" ("sur pointe"). The sediment slides down into the bottle neck to rest on its lees (sediment) prior to being disgorged and placing the final cork and cap on it. - Community Wine Reviews
