The 2013 vintage of this spectacular Niagara sparkling wine is creamy, rich and layered on the palate. Blanc de blancs means that this was made only from white grapes, in this case, Chardonnay. This bubbly holds its own against Champagnes that much more expensive. Perfect as an aperitif or companion to seafood, shellfish and potato chips.

Made using the traditional method, this beauty produced from 100% Chardonnay spent an impressive 60 months on its lees.

Rich aromas of poached apple, fresh warm baguette, mineral notes, and a nutty finish. It is creamy and opulent on the palate with crisp acidity and many fine bubbles. Flavours of baked apple, warm baked bread, lemon and a nutty finish. It is absolutely delicious! A good dupe for Champagne.

Wine-Food Pairing: Very versatile and great on its own. Pair with lobster or rich seafood, fried chicken, tempura sushi, fried appetizers, and yes, popcorn!

One of the best bubblies in Ontario and perhaps Canada, there's a lot going on here, from toasted nuts, to golden apple sauce, preserved citrus and fresh baked bread. The finish has cut grass and raw hazelnut notes. 93 Points.

Leads with a very toasty nose, fresh baked bread, apple pie, and brioche, before a subtle anise and herbal note appears. Creamy, rich palate, finishes crisp and dry with resonating lemon, green apple, and a wide array of autolysis, especially biscotti. 20% of the blend was barrel fermented and aged before blending. Five years on lees prior to disgorging. A superstar sparkler that would be quite at home with caviar or oysters.

A New Years delight. Classically elegant Henry of Pelham’s Cuvee Catherine - Carte Blanche. Made from their own estate grown, hand-picked Chardonnay. Light bubbles and vigorous mousse. Secondary fermentation in the bottle gives this awesome bread like and yearly characteristics. Flavours are brisk showing mouthwatering green apples, citrus grapefruit skins and distinct minerality. Acidity is high with a light body and finish. An absolutely must, try with smoked salmon or oysters. 91 points - tasted Jan 1st, 2019
From the Short Hills Bench, Niagara Escarpment, Henry of Pelham's Cuvee Catharine Carte Blanche Estate is a rich, creamy and leesy Blanc de Blancs made in the Traditional method as in the making of Champagne.
