Produced from 100% estate-grown Chardonnay sourced from the Short Hills Bench, Niagara Escarpment wine region, Henry of Pelham Cuvée Catharine Carte Blanche 2017 is a traditional method Blanc de Blanc with a creamy and rich mousse of ripe apple, dried quince, ripe stone fruit, brioche, lemon creamy and mouth-watering long with a saline minerally finish. So elegant, it is simply gorgeous. Produced from 100% estate-grown Chardonnay with 20% of the fruit barrel fermented with secondary fermentation in bottle, Carte Blanche 2017 spent a further 54 months aging on its lees. - Community Wine Reviews
