Henry of Pelham Catharine Carte Blanche 2016 Blanc de Blanc is a traditional method bubble with a creamy and rich mousse of crisp crunchy apple, fresh-baked croissant, citrus zest, nutmeg, ginger and leesy mineral flavours on the palate balanced with spine-tingling acidity. Produced from 100% estate-grown Chardonnay from the Short Hills Bench, this bubbly is fermented partially (20%) in barrel and then aged 54 months on its lees.

From Henry of Pelham, Catharine Carte Blanche 2016 Blanc de Blanc is a traditional method bubble produced from the winery's best Chardonnay grapes from the Short Hills Bench. The wine juice was partially barrel-fermented and aged on its lees for 54 months. Carte Blanche is elegant and toasty on the nose with biscuite, poached pear, apple, mineral, soft citrus, warm vanilla flavours and creamy with a fine, persistent and vibrant mousse. Drinking beautifully now, but has the acidity, balance and structure to hold for a few more years in cellar. - Community Wine Reviews
