Coyote's Run Estate Winery is located in the Four Mile Creek sub-appellation of the Niagara Peninsula. This area is characterized by warm days and cool nights throughout the growing season. Coyote's soils are very interesting as one part of the vineyard has red soils and the other part has black soils. As a result, each year the winery releases a "Red Paw" and a "Black Paw" Pinot Noir. The 2012 vintage in Niagara was punctuated by an early spring, followed by a long, hot summer, and a dry harvest period. This allowed for a steady and even period of berry ripening.
The 2012 Black Paw Pinot Noir has a garnet colour with a subtle hint of brick brown. Lots of earth, dark cherry, subtle mushroom, cinnamon, and oak spice aromas are complemented by a palate that has sour dark cherry, cranberry flesh, and some earth tones. The tannins are medium and the acidity is lively. Enjoy this wine with cedar planked salmon, duck breast or roasted chicken.
