Ripasso is a fascinating Italian winemaking technique that is also used now in other regions. The wine is “re-passed” or fermented a second time with dry Amarone grapes to deepen the flavour and concentration. What emerges from the glass is a bundle of black cherry and dark berry aromas along with some anise, cloves and cedar brush. This wine will do well in the cellar as well as on your table tonight.
