From Hawke's Bay wine region, Trinity Hill, The Trinity 2018 is a Merlot dominant blend with Cabernet Franc, Cabernet Sauvignon, Petit Verdot and Malbec in support. Fragrant with spiced plum and leathery notes, the wine is dry, medium-plus-bodied with a mouthful of blackcurrant, plum and red berry compote, earthy and cedar spice flavours smooth and silky on the palate with ripe tannins. Each vineyard parcel was harvested separately, de-stemmed prior to fermentation and skin maceration was extended for up to four weeks to further integrate and soften the tannins. The individual wine juice was aged 15 months in a combination of French oak barriques and stainless-steel tanks, then blended to create the final wine.

Food pairings: roast pork, beef enchiladas, meaty stews and soups.
