This full-bodied Cabernet Sauvignon from Hess Collection Winery has a smattering of Petite Sirah, Malbec and Petit Verdot grapes added to it. The Cabernet Sauvignon wine grapes sourced from the Allomi Vineyard. Plushy on the palate with flavours of ripe plum, mocha, savoury herbs and fresh acidity on the palate. Pair with gourmet burgers.

Cabernet Sauvignon food pairings: gorgonzola topped sirloin, grilled veggies, herb-crusted poultry, hearty meat dishes, hard cheese.

Reviews and Ratings

Alana L rated this wine as 92/100 with the following review:

Another tasting from the Montreal 'A Taste of Napa Valley' wine event, this complex yet easily drinkable wine was my showstopper! Medium-bodied, dry, without overbearing woodiness this beautifully coloured red has a complex nose (spice, smoke and ripe fruit), a broad texture and a medium finish. Notes of both vanilla and spice round this wine beautifully. I could see this pairing with a simple roast chicken, roasted vegetable dishes or smoke cheeses such as gouda and aged cheddar. Shall be purchasing a case of this for certain as would likely age beautifully over a couple of years!
Sharon Lécuyer rated this wine as 91/100 with the following review:

Faint nose but flavours of blackberry and vanilla. A bit heavy on the tannins so I would cellar this beauty for another year or two. When ready, decant this one and pair with a steak!!! Would make a great gift for the red wine lover in your life.
Deborah Podurgiel WSET IV Candidate - Certified Sommelier rated this wine as 91/100 with the following review:

A classic California Cab in every way, plushy and satisfyingly delicious. The Hess Collection, Cabernet Sauvignon from Allomi Vineyards is blessed with steady heat in the Pope Valley, Napa Valley region. This combined with well-drained clay/loam soils allows the Cab Sauvignon wine grapes to ripen slowly, evenly and fully. On the nose, the wine is fresh mushroom and earthy forest floor. On the palate, this dry, medium-bodied red is showing bright, ripe raspberry, red plum, blackberry flavours and a long vanilla and oak spice finish. Tannins are well-integrated and the mid-palate is plushy. Cellar for three years or decant for one hour and pair this Cab with grilled sirloin steak topped with blue cheese.
Hess collection is a well-respected Californian winery and sources its Cabernet Sauvignon wine grapes for Allomi 2016 form their estate Allomi Vineyard (there is also some Petite Sirah, Malbec and Petit Verdot wine grapes in support in this vintage). Full-bodied with intense flavours of mocha, plush plums and dark berry flavours on the palate. Enjoy now or hold in cellar for five years. - Community Wine Reviews
