A benchmark Riesling from Niagrar with terrific aromatic vibrancy! There's a rich, firm core of minerality here. The grape yield is kept to just 2 tons per acre to concentrate the flavor. It's also press fractioned to use the best juice and whole cluster pressed. A long, creamy finish. Pair with fresh seafood and shellfish.

Riesling food pairings: briny shrimp, scallops, mussels and clams are great with this wine, roast pork as well as pasta with white sauce.

The Speck Family Reserve from Short Hills Bench VQA shows pale yellow with the nose of classic Riesling petrol/minerality, citrus and herb/fennel. Mouthwatering acidity, intene with mineral, citrus lemon/lime, chalky texture, and bit of residual sugar under all that racy acidity. Tasted June 6, 2015

Starts out crisp with lemon, lime and granny smith apple; opens up to more fruity aromas of peach, pineapple and ends with a distinct minerality. Very pretty balance of fresh acidity and residual sweetness. Tried with 2 styles of Canadian goats cheese; Grey Owl is ash-covered and creamy and the Salt Spring Island Garlic Chevre is crumbly and more traditional it goes nicely with both styles. Enhances complexity of ash-rind without the bitterness, and fresh acidity is a nice contrast to creamy cheese. For more traditional style, the tanginess in the cheese and the fruitiness in the wine are amplified together. Also would go well with creamy fettucine, and seafood such as shrimp or lobster.
