San Pedro Sideral 2021, Cachapoal Valley, D.O., Chile: Sideral 2021 is a dry, medium-plus-bodied red wine blend of 73% Cabernet Sauvignon, 11% Syrah, 9% Petit Verdot, 9% Carmenère, 4% Petit Verdot and 3% Cabernet Franc grapes sourced from the Cachapoal Valley wine region. The wine was aged for 16 months in oak barrels (20% new) as well as in 2,000-litre casks. Grapes are sourced from cool-climate sites in the Summerland area from vines thriving in alluvial gravel, sandy loam and limestone soils. The winery began farming organically in 2014 and had completely converted to organic methods.
