Full disclosure: Scotland's most northerly distillery - Highland Park - is one of my favourite distilleries in Scotland. Pretty much all their labels have bewitched me. The 25 is just beyond this world! Aromas include: caramel, oak, dried fruit, BIG BAKING SPICES, nutty Oloroso Sherry notes and sweet smoke. The flavours are just sublime, perfectly mimicking the aromas with caramel, maple roasted nuts and Oloroso elements. - Medium-Full bodied - Smooth - Medium finish - Rich & Round Camp *$350.25 @ SAQ

My absolute favourite Speyside Scotch! This bottle is a gem for an NAS (no age statement) Single Barrel Speyside Scotch! So complex, so rich, round, and so delicious. Heavenly aromas include: roasted hazelnuts, almonds, salted caramel, apricot jam, vanilla, baking spices (nutmeg, all spice), baked apple, and candied orange peel. When cut with a few drops of water (remember its 60% folks!) you'll find flavours of sweet cereal, pralines, orange peel, Oloroso Sherry, and somewhat of a buttered raisin bread. The layers of flavours go on and on! - Full Bodied - Smooth alcohol integration (with water) - Long Finish (cereal, candied orange peel, and pralines) - Rich & Round Flavour Camp

A benchmark Chardonnay hailing from from the Niagara Escarpment. This wine upholds classic aromas of fresh apples, stone fruit, mineral and butterscotch (just the perfect hint of oak) . On the palate some creamy, yet luscious characters comes through along with the zesty lemon and green apple flavours. This wine is a hefty medium to full bodied wine with lasting finish. Pair with roasted poultry: chicken, turkey, cornish hens; or with fatty seafood: seared halibut, swordfish, crab, lobster.

What a superb NAS whiskey from Glenmorangie! This single malt is, however, blended partly from casks aged 30+ years. Aromas include: caramel, dried apricot, BIG BAKING SPICES, toasted hazelnuts and a pleasing candied orange peel character. The flavours follows the aromas to perfection right through to a cinnamon, clove and candied orange finish. - Medium-Full bodied - Smooth - Medium-Long finish - Rich & Round Camp

Glorious! Rich, deep, complex with layers upon layers of texture. Flavours seamlessly contour on top of each other. Dominant notes include orange peel, apple, pear, honeydew melon, a touch of white pepper and minerality. Pair it with itself! Enjoyed every sip of this in Oct 2016. @sommsosa | bespoketasting.ca

Memorable Wine

I have yet to find one. However, I can tell you what my most memorable dram was! That is the 25yr Highland Park. It is just out of this world good!

First Wine

Hmmm. Probably something from Beringer. It was one of the few bottles that somehow made it to the hot humid shores of Belize.

Unusual Wine Experience

The day I can truly pinpoint my passion for wine! (Before my wine geek days) I politely asked the winemaker at Gibbston Valley Winery, in Central Otago, New Zealand, if they are making their 2010 vintage rose from blending red wine with white wine..... He said no, thats not how they work.... now I know better.
