Beringer Chabot Vineyard Cabernet Sauvignon 2000, Napa Valley, California, United States: A round, supple, full-bodied red with layered complexity of dark red fruit. Long finish. The Chabot Vineyard is located east of the Silverado Trail and north of the road that goes up Howell Mountain to Bancroft Ranch and Steinhauer Ranch. The soils there are rocky, with shiny obsidian (this is why it's known as Glass Mountain) and pumice and bedrock that combines provide excellent drainage. This is a beautifully structured wine that shows how well California cabernets, especially those from single vineyards, can age. Highly recommended.
