Grapes for Mitolo Jester 2018 Cabernet Sauvignon were sourced from loamy, black Biscay clay soils that cover ancient bedrock in the McLaren Vale. Fragrant with dark berry, plum, Kenya AA coffee and dark chocolate aromas, the Cab is dry, medium-bodied, vibrant and savoury on the palate. Twenty per cent of the fruit was dried as in the Appassimento method prior to fermentation with remaining grapes fermented on their skins. The wine was matured in previous use French oak barrels for 14 months. Pour with burgers, ribs and steaks from the grill.

Excellent value on this Mitolo Jester 2018 Cabernet Sauvignon at $20. Fragrant with dark berry, plum, dark coffee and chocolate aromas, this Cab is dry, medium-bodied, vibrant and concentrated with cassis, dark cherry, fine herbs and spicy notes on the palate with a velvety tannin finish. A portion of the grapes were dried as in the Appassimento method for the fermentation process. The wine was matured in previous use French oak barrels for 14 months.
