Crisp, fresh and vibrant Niagara Sauvignon Blanc that was one third new barrel aged, one third old barrel and one third concrete tank. Savoury with dried herbs and lemon citrus.

Fumé Blanc food pairings: chicken and sage skewers, fresh tomato and basil salad, Thai green curry fish, smoked oyster Poor Boy sandwiches.

Taste of Ontario 2019 @ Ottawa: Straw coloured, aromatic and flavourful, zesty and dry with a moderate nose. Definite herbaceous and lemon aromas. A very pleasant citrus flavour with minerality. Nice tang from the indigenous yeasts. This wine spent time in a concrete egg and second fill oak before bottling.

Smoky wood, cedar, and oak spice lead before passion fruit and tropical fruit, lemon and melon, and a bit of nutty and kernel/corn character enter the fray. Extra dry, pleasant texture, a really nice take on oaked Sauvignon Blanc. Interesting and layered, this will suit chicken and veal in cream sauces and fresh spring vegetables.

Dusty nose with elements of green grass. A hint of floral undertones. Smooth drinking, herbal tones dominate the palate. The fumé aspect is very subtle with the oak just lending a touch of texture and body. Overall nice balance and medium finish. Try it with swordfish or pickerel.
