Very pleasant Chardonnay with lovely notes of green apples, melon and Asian pear. A judicious use of oak gives a pleasing vanilla-spice finish.

Rusty Shed Chardonnay 2007 is a blend of our four blocks of Chardonnay on the Flat Rock Property – clones 95 and 76 on rootstocks SO4 and 3309. The individual blocks were vinified separately.

Grapes were handpicked in 15kg crates in September, after which it was hand sorted on a shaking sorting table to ensure only the best fruit made it into the wine.

It was then either de-stemmed and crushed or whole cluster pressed, the juice handled oxydatively and cold settled in stainless steel tanks. 100% were fermented in barrel with a variety of yeast strains. The wine was left on the gross lees to develop and the lees were stirred weekly for 10 months for the mouth feel to develop. 70% new French Oak barrels were used, 10% second fill French and the rest older oak to achieve good expression of our fruit and balance with oak. Wild as well as commercial yeast strains were used for the primary fermentation and malolactic fermentation was completed to soften the natural acidity of this Chardonnay.

Following maturation all the barrels were tasted and the ones expressing the best structure, aging potential and fruit character were selected for the Rusty Shed Chardonnay 2007.

The wine was taken out of barrel after 10 months after which it was blended, racked, stabilized, filtered and bottled in August 2008.
