Cavas Hills Cellars are located in Mojo, in the heart of the Alt Penedes region to the southwest of Barcelona in the heart of Cava Spanish sparkling wine production. The winery's history dates back to the seventeenth century when Englishman Joseph Hill was tending vines on the property. This is a traditional blend of Spanish grapes including Xarel-lo, Macabeo and Parellada and the wine is made using the traditional method of the second fermentation in the bottle. Pale straw hue in the glass. Toasty, green apple notes. Great price.

Reviews and Ratings

Jane LeFresne rated this wine as 89/100 with the following review:

This Cava from Spain is made using the traditional sparkling wine method. A pleasant aroma of apple, vanilla, brioche and honey with nice bubbles. Flavours of red apple, lemon and honey.

A well priced bubbly to take to a friend's or use as a hostess gift. OR to drink through the week, bubbly doesn't have to be for special occasions.
Monique Sosa - Accredited Sommelier rated this wine as 89/100 with the following review:

Fresh stone fruit galore! This Cava is quite a treat for its value. Creamed peaches, fresh apricots, apple and pear. Nice mousse on the palate. This light bodied, high acid, dry sparkling makes for a terrific apéritif. Pair with oysters!
Jennifer Havers - WSET Level 3 rated this wine as 88/100 with the following review:

Cava is a great value and this is no exception. Made in the traditional method, the bubbles are fine and produce a lovely fizz. Aromas are toasty and include a hint of butter and green apples. Light and flavourful, this is a perfect apperitif, and pairs with pretty much anything: Oysters, salads, fish and seafood, rich cheeses or sauces, or maybe just on its own.
Douglas McMillan rated this wine as 88/100 with the following review:

Lots of medium bubbles, and great acidity. The aromas a bright with plenty of apricot, apple, and biscuit. The apricot is especially noticeable in the taste. Quite a good value in a Cava.
Matt Steeves - Certified Sommelier rated this wine as 88/100 with the following review:

Cava = terrific value. This is a great little traditional method bubbly that would be ideal on the patio this spring with charcuterie, grilled fish, oysters, you name it! Tart orchard fruit, baked bread, with refreshing bubbles. At $13 you can’t go wrong! Would also be a terrific base for ‘Champagne’ cocktails. Tasted April 2015. Matt Steeves - www.quercusvino.ca
Kristin Perrin rated this wine as 83/100 with the following review:

Minerally, citrus, slight petrol nose
Apples, yeast, lemon, light bodied

Light seafood dishes, or tangy goat cheese

It's a blend of Xarel-lo, Macabeo and Parellada.
Cava is made of Traditional method.

Fine bubble, clear yellow/straw color with notes of lemon peel, toasted bread and green apple.

The palate is fresh, balanced and medium.

Pair it with grilled shrimp skewer or tapas.

Serve it at 5-6 degrees.

Enjoyable now.
