Created and crafted by Diego Cottini and Monte Zovo, Ca'Linverno 2015 is a concentrated, aromatic wine produced from a blend of dried, shrivelled Corvina, Rondinella, Molinara and Cabernet Sauvignon wine grapes from a technique discovered by Diego Cottini himself. The first drying method takes place on the vines themselves allowing the grapes to dry, wither and concentrate until mid-November. After harvest, grapes are placed on a plateau and continue to dry and concentrate. After fermentation in stainless-steel tanks, the wine rests until March after the harvest and is then transferred to French oak barrels to age for two years prior to bottling. Ca'linverno is big and intensely fruity with bright red berry, cherry, red currant, blackberry, mocha, toasty nut, cedar, sweet spice, vanilla and smoky flavours on the palate with vibrant acidity and structured, chewy tannins. Pour with a meat-lover's pizza topped with more meat.
