From the Famille Perrin, Tavel 2023 is a bold, dry, medium-bodied and food-friendly rosé blend of Cinsault, Grenache and Mourvèdre. The "grand cru of rosé" is a delight on its own, or with grilled chicken dishes and Cobb salads. This vintage is fragrant with pink florals, red berry, watermelon, fine herbs and stony mineral notes so savoury and zesty on the palate. Produced in the saignée method, where the whole berries are placed in the tank and are allowed to crush under their own weigh. After 12 hours of maceration the free run juice is left to 'bleed' out and fermentation begins after settling. The wine juice was cool-fermented for about 20 days, then racked and rested in stainless-steel tanks until filtered and bottled.

Food pairings: grilled salmon steak, shellfish, veggies, pasta primavera.
