Love, love, love this dry Fino! It's not a Sherry because it's made in the region of Montilla-Moriles, not Jerez, but this has so much elegance and finesse. Toasted almond and a briny ocean note. Pair with roasted nuts and hard cheeses.

An excellent example of Spain's favourite aperitif. Made from 100% Pedro Ximenez varietal, the queen grape of the Montilla D.O. Aged biologically under a blanket of flor in American oak casks, using the Solera system. Shows a yeasty, savoury nose with hints of olives and characteristic salinity. Palate is rounder than Fino produced in next door Jerez, with mouthwatering acidity that wakes up your taste buds. Serve well-chilled(7-9C) and enjoy with olives, salted nuts or sushi.

Fino Montillas (sherries, but not allowed to be called such as this winery is outside the official Jerez DO and in the Montilla-Moriles DO) A compelling and complex mix of tastes and textures: dry, viscous, oily, bitter almond, yeast, biscuit, chalk, ash and salt - very cool. Chill well and serve with Mediterranean tapas. The winemaker also suggests using in place of vermouth in cocktails - neat twist!

Aromas of marscarpone, honey and buttered toast, transforming into a tangy mouthfeel, and citrus finish.

Almond and buckwheat honey, whiskey barrel, almond and pistacio but palate is very dry and savory. Green olive, almond, and notes of brie cheese rinds. Good pairing for olives, salty fish like anchovies.

A lovely Sherry, made entirely from Pedro Ximenez. Yeasty and salty notes on the nose, almost savoury and briny on the palate. Lengthy finish. Perfect with olives, nuts and various tapas, but could even pair with salads and crudite. Enjoy!
