There’s no time like the present to start your collection for Canada Day and you’ll definitely want a few of these for the celebrations! This non-vintage, traditional method B.C. beauty from the Okanagan Valley was hand-harvested and is a blend of 50% Pinot Noir, 45.5% Chardonnay and 4.5% Pinot Gris. Fermented separately pre-blending with 2 years ageing sur-lie and then 6-9 months in cellar, it’s well integrated and balanced with a fine and lingering mousse. With flavours of fresh green apples, pears and bright lemon plus hints of white peach, cherries and toasted pain de mie. Pair with friends and fireworks? You bet! Smoked salmon with lemon and dill crème fraîche? B.C. doubles up and represents, but what about our east coast? Oysters and mignonette, bien sûre mes amis et bonne fête!
