Deep ruby core fading to a bright cherry red rim. This wine displays strong legs indicative of the 15% a.b.v.
Very expressive on the nose with pronounced aromas of black raspberry, maraschino, truffle, tobacco,leather, cocoa nibs, and wet soil.
This wine is dry, with medium+ body , medium+ acidity, and fine, firm tannins. On the palate it shows even more red fruit character with flavors of pomegranate, wild strawberry, green peppercorn, sour cherry and red current, black tea, and black olive. The long finish compliments this wine's complex nature.
This wine paired beautifully with a wagyu bresaola. It had more than enough acidity, richness, and structure to compliment a fatty, unctuous meat. Would easily recommend with duck or game.
