Palo Cortado, from Bodega Valdespino in Andalucia, Spain is an unusual intermediate Oloroso/fragrant style of sherry that starts as a biologically aged wine but gradually loses the layer of flor and continues maturation oxidatively. Intensely fragrant and flavourful, with complex layers of dried fruit, salted toffee, nuts, balsamic, toast, orange peel and cigar box with a mineral backbone. It caresses the tongue, awakening all of your taste buds and has a lingering, dreamy finish. Once tasted, you will always remember this wine. Enjoy with cured meats, soft blue cheese, foie gras or nuts. This outstanding wine was rated 99 points by Robert Parker and I would definitely concur. Almost impossible to find outside of Spain, where it sells for between 90-120 Euros per half-bottle. Tasted Nov. 2016, #Sherry TT

A taste of Andalusian sunshine in your glass! Made from 100% Pedro Ximenez grapes which have been dried in sunshine on grass mats, then aged in traditional earthenware jars, "tinajas" for at least 12 mos. A beautiful amber colour, with rich aromas of raisins, dates, apricots and orange rind. The palate is decidedly raisiny, with flavours of dried fruit and rinds and hints of rosemary honey. Extremely satiny and luxurious- liquid velvet in your glass. Robert Parker gave the 2011 Anada 100pts. Serve 6-8 C, with Creme Brulee and crushed nuts, or simply on its own. You could cellar this til 2025. But life is short- why wait? Tasted Jan. 2017

Joy in a glass. Not made every year, only when conditions are optimal, using the best grapes selected from the best Dourthe estates, blended from Cab Franc, Cab Sauv, Merlot and Petit Verdot. Fragrant and harmonious, subtle, with complex layers of flavour and a dreamy finish. Lucky to have tasted the 2010. The winemaker calls it a "Super-Bordeaux". Tasted with Frédéric Bonnafous, Head Winemaker for the Bordeaux estates of Dourthe, April 2017

Bright yellow in colour and highly perfumed, with the nose giving grapefruit, bergamot and ginger, with flinty and white pepper notes. The palate is voluptuous, giving an outstanding silky, satiny mouthfeel with flavours of Amalfi lemon, grapefruit zest, ginger, saline minerality and a touch of honey that evolves on the finish. The wine has a very persistent and aromatic finish which makes it highly memorable. Pair it with lobster, goat cheese or veal. Tasted November, 2023

D3R was crafted in a collaboration between Formula 1 legend Daniel Ricciardo and St. Hugo’s chief winemaker, with the same passion and precision that Ricciardo channels into his racing. This is a big, bold, elegant Cab. It shows an opaque deep purple in the glass, with an aromatic nose of inviting ripe blackcurrant and vanilla notes. The luscious, velvety palate gives concentrated flavours of blackcurrant, dark cherry, mint, dark chocolate, cedar and vanilla. The tannins are still a bit chewy, but will soften with aging. There’s a long dark berry finish with a delicious final note of vanilla. Cabernet Sauvignon is the classic pairing with a rare grilled steak, but will also pair beautifully with rack of lamb. This wine can cellar until 2041. This memorable Cab was awarded a Double Gold Medal at the 2023 Global Fine Wine Challenge. Tasted June 8, 2024.
