This wine is all class! A blend of 48% Cabernet Sauvignon, 47% Merlot and 5% Cabernet Franc, it is drinking beautifully now but will keep developing over the next 8 years.It has a savoury character with a long finish, well balanced and there are aromas of cherry and mocha. I love to drink it on its own but it enhances red meat dishes very well.

Flagstone Dragon Tree is one of my all time favourite wines that I could happily drink every day! In every respect a sexy, cult wine which has a huge following in South Africa. Flagstone owner, Bruce Jack, is a philosopher and writer creating wines which each have a unique tale linked to an event in South African history. Flagstone Dragon Tree amazingly pairs well with raw fish, wasabi, rice and even with hot North Indian curry. Try it!

This De Toren flagship wine is one of the best Bordeaux style wines coming out of South Africa. So popular is it that sales restrictions at the winery were imposed. There are beautiful flavours of spice and blackcurrant in this perfectly balanced blend.

Tulbagh is a wine district in the Coastal Wine Region of South Africa.TMV is run using a terroir driven approach and bio-dynamic farming methods. Spectrum 2008 is a much lauded blend of Chenin Blanc 62%, Chardonnay 14% Grenach 9%, Rousanne 8% and Viognier 7%. The components were fermented seperately in old oak barrels and 600 liter Nomblot egg-shaped fermenters and only native yeasts were used. Malolatic fermentation was allowed and the wine was left on its lees without sulphur additions. After a year the wine was racked and blended. The result is natural richness and mouth feel as well as natural minerality. The palate is rich and complex with elegant layers of citrus, lime and vanilla flavours ending in a long, long finish. Food matches are roast herb chicken or duck with orange or ginger sauce. For me this is a superior quality wine.

Unusual Wine Experience

A good friend who is a bit like a nutty professor set up a winery in his home and began producing. However, he believed that he could not assess his wines so he invited my partner and I around to help with blending. We saved a batch of Merlot which would have been poured down the drain by selectively blending it with Cabernet Franc.
