Tortoise Creek, developed by Janie and Mel Master, has quite a following with Opimians. Sauvignon Blanc planted on selected parcels in Gascogny with chalky clay soils were used to produce the Tortoise Creek 2011. The grapes were night-harvested and left for 24 hours skin contact prior to pressing. The juice was then held for 30 days at zero degrees in order to extract full fruit flavours prior to fermenting. Gooseberry, smoky aromas combine with herbal leafy notes and a good mid-palate which leads to a fresh finish.
