A perfectly balanced and elegant BC Chardonnay that's bursting with voluptuous aromas and flavours of toasted almond, golden apple and baking spice. Layers of texture on the palate. Pair with pheasant and quail.

Chardonnay food pairings: butternut ravioli served with Alfredo sauce, roast duck, crab cakes.

This is a Chablis style Chardonnay. Select blocks were hand harvested, cluster sorted, then gently whole cluster pressed. Slightly settled juice is transferred to 500 L French oak puncheons to wild ferment and complete a native malolactic fermentation. Each barrel becomes a unique ferment with individual properties lending complexity to the wine. Select barrels are blended and bottled after 10-12 months of ageing on lees.

The wine has aromas of citrus with a toasty note from lees ageing. On the palate, there are flavours of peach and apple with a subtle oak expression.

The wine here is pale lemon with a complex and appealing nose of lemon, brioche, vanilla, coconut, citrus peel, tangerine and apple pear. On the palate it is nicely dry, lean and fine boned with a lovely melange of flavours including applepear, vanilla, tropical fruit, tangerine, coconut, melon, and some brioche, all held with a snugly wound
acidity that gives the wine a cool climate clarity. The intensity of the finish is medium minus similar to Chablis but that bit of lightness is more than compensated for by being persistent and reasonably long. Would like to see how it develops in a few years. This is an atypical and very interesting B.C. chardonnay.

Incredibly alluring! Not your typical Chardonnay. Elegant notes of baked apple, melon, toasted almonds and chamomile tea. This Chardonnay is dry with a buttery mouthfeel and a long nutty finish. Chardonnay grapes for this wine were hand-harvested and sorted and wine was fermented in large oak barrels. There is a toasty, mineral note on this wine due to allowing the wine to rest on its lees. - Community Wine Reviews
