For both liquid and dry yeast cultures you will need to prepare a starter culture in advance, very similar to the one you prepare before making bread. Boil 3 Tablespoons of corn sugar or dry malt extract in a pint of water for five minutes and let this cool to room temperature. Yeast will die at temperatures over 110° F., so do not pitch it too soon. Pour the sugar water into a sterile quart container (Mason Jar) with a tight fitting lid, pitch the yeast in , seal tightly and shake well to aerate. Crack the lid on quarter turn and set aside in a warm place to incubate. Dry yeasts need only stand for 45 minutes to an hour before ready. LIQUID YEASTS SHOULD INCUBATE AT LEAST ONE FULL DAY IN THE STARTER CULTURE. If you use liquid yeast, follow the instructions exactly.
