Yossi Yittach, a former architect, decided in 1998 to fulfill his dream and become a winemaker. Looking for an expert to guide him, Yittach approached an old Persian lady, who shared with him her ancient Jewish family wine making tradition. Yittach went on to study wine-growing, chemistry and wine-making technology, becoming an acclaimed expert. In order to preserve the old-fashioned quality, to this date Yittach's old mother is the first to taste the first new vintage.

Yittach's passionate commitment to producing the finest wines is reflected in each step of the wine making process, resulting in prize winning wines. The acclaimed fertile soil and unique climate conditions of the small mountain terraces scattered around the village of Nes Harim allows full control over the characteristics of the grape and maximum precision in the harvest timing, granting thus a perfect balance.

The winery is named after the Katlav Steam which trickles its way down the eastern slope of the ridge on which Nes Harim is built. It is named for the Arbutus tree that grows here in profusion, with its beautiful reddish trunk and clusters of red fruit.
