When autumn arrived, the first frost came caress the vineyard, as to tell the winemaker: it's time to put away your harvest;
when clusters attractive curves to make you a wink, then, must go into action!

The press and the vats are washed; already busy pickers along the lines covered with gold clusters that are transported to the press. In the evening and at night, we gathered up the delicious juices.

* The great September sun contributes to the advent of a blood sugar ideal for quality wine. October is the month for the long work of wort. He must cross the tumultuous fermentation, and in November the malolactic at temperatures of twenty degrees.
As a baby they will take care to relieve him of his lies and lie again in a tank clean. The month of February will bring a chill voluntary and necessary to precipitate tartaric acid. Eventually this new wine will make a visit to a small oak barique to improve.

The Winemaker monitor a watchful eye on development of wines that are assigned and when the time comes, he will order filter for bottling.

At Domaine du Cervin whole family is working to satisfy you.

From earth to table!

Unquenchable by Natalie MacLean

Natalie MacLean is a new force in the wine writing world ‐ a feisty North American answer to Hugh Johnson and Jancis Robinson. She can write beautifully about wine.

The Financial Times of London

There are very few people in the wine world who "get it" and Natalie is one of those who brings more fun to a buttoned-up and stodgy game.
