A wonderful cava made in the traditional method
Resulting in fine bubbles, brilliant pale
Straw with a soft golden hue. This is a crisp, balanced impressively structured sparkling. The lime zest, raw almond, fresh white bread, aromatics impress the palate. Great acidity. Enjoyed with fresh popcorn and drinking easily on it's own. Tasted Jan 2017. Rated 90/100.

Cava is divided among those who appreciate the traditional varietals (Xaraello, Parelleda, and Viura) and those who feel there is potential for Chardonnay and Pinot Noir to express the terroir of the Penedes area where Cava is made. This one makes no pretense of taking sides - it contains both traditional and international varietals. Their goal was to achieve the most interesting aromatic profile they could.
Pale straw, with somewhat persistent bubbles.
This wine is very floral, with the wild spiciness of Xarello poking through.
Asian pear, sprinkled with cinnamon amd ginger. There is a chalky minerality apparent even on the nose.
The flavours are more delicate than the aromas. Confectioner's sugar, pineapple, pear, lime, and ginger. The biscuitiness of a traditional method sparkling comes through on the finish to pull it together.
It has tremendous acidity! Very lip-smacking.
Put alongside ceviche or oysters.

I do love a sparkling wine. This blend of 30% Xarel.lo, 30% Paralleda, 30% Macabeo, 10% Chardonnay made with the same method of champagne is about a 1/4 of the cost (and then some). A touch of biscuit and citrus on the nose. Crisp acidity and some green apple flavours. Long mouth watering finish. Tasted January 15, 2017.

I like the look and feel of the textured, energetic bubble streams in this pleasing sparkling wine from Spain’s Cava appellation.

Its scent and flavours entertain, too. Extroverted and fresh in my glass, they evoke tangerine, white grapefruit and peaches. The stone fruit notes clings to my taste buds in more than a minute long finish, a positive in my books.

This Cava is equal parts Macabeo, Xarello and Parellada (30/30/30) with 10% Chardonnay.

Serve chilled with something salty. Enjoy.

Cava's are a terrific alternative to Champagne if you're not interested in forking out $40-$100 for a bottle. Cava's are produced in the same way as Champagne, with similar high quality, just with different grapes, and at a fraction of the price. This Cava displays wonderful micro bubbles, refreshing acidity, and would pair terrifically with any rich dish, hors d'oeuvre, or fast food. Tasted October 2014. 88 points. Matt Steeves @QuercusVino

This is an interesting light sparkling. Pale and clear with a hint of ginger on the nose. Fine fizz, a bit short on the finish. Would benefit from food accompaniment such as smoked salmon or salty chips.
