Love the Evolve 2021 Spontaneity from TIME Family of wines. The blend is a little different on this vintage with a focus on Ortega (70%), 15% Ehrenfelser, 13% Chardonnay and 2% in Riesling. Just dry, barely medium-bodied, fresh with well-balanced medium acidity, the wine says summer all over it. On the 2021 vintage, I am getting more white florals on the nose, then lemon pudding, fresh melon and some ripe stone fruit notes toward the finish. Extremely moreish... particularly on a hot summer day on the patio or at the beach.... in fact, chill up two to have on hand ;) The 2021 vintage was awarded silver at the 2022 All Canadian Wine Championships for Best White Blends and I totally concur. Tasted July 2023.

Grapes were hand-harvested, sorted and whole bunch pressed. Each variety was fermented separately prior to the final blend. Produced by winemaker, Lynzee Schatz. Chill and enjoy the wine with crab cakes and garlic aioli or salads topped with fresh steamed and chilled shrimp.
