Great finesse and elegance, persistence of bubbles. This is assembled from 35 crus and 40% Chardonnay, so while not a Blanc de Blancs (all white wine grapes, that is Chardonnay), this bubbly still has the elegance of that style. Pair with shellfish, especially fresh oysters.

Taittinger has everything you would expect from excellent French Champagne. I suspect this is mostly Pinot Noir based on the aroma and flavour profile. Lovely fine streams of bubbles carry amazing red cherry and raspberry, along with toast, bread, dried apple, and lemony acidity on the finish. Great for celebrations of all kinds. Now priced at $76.95. 4.5 stars out of 5.

Not just for special occasions, there should be more excuses and opportunities for bubbles! This one is maybe priced more for a special occasion, but could make any Monday a celebration. Aromas are bready and yeasty with lemon zest and pith. Dry on the palate, with small, persistent bubbles, and a lovely balance of yeasty and citrus and apple hints. Finish is crisp and clean. Enjoy with anything, but these bubbles would be particularly good with some kettle cooked potato chips or fresh oysters - or both at the same time?!

Fine, gentle bubbles with a light fluffy mousse. Elements of yellow apple, delicate minerals and lightly toasted brioche. Medium bodied and dry with toasty apple flavours and delicate bright minerals. Flavourful and delicious. Pair with smoked salmon canapes and creamy cheeses.

Tiny bubbles is not just a song by Dean Martin, though I could picture myself in front of a crackling fireplace glass in hand with Dean crooning in the background! These bubbles are tiny, fast and furious. Subtle nuances of biscuit, mineral and citrus abound. Crisp, brioche and some ripe pear with a long finish. In my world champagne pairs with anything from salty potato chips to oysters - try them all! I tasted this champagne again on Oct. 2/2016 and it was just as lovely as before!!
