Matahiwi Estate 2016 is made from 100% Pinot Noir from the Wairarapa Valley, Martinborough, South Island. Wine grapes are cold soaked for between five and seven days and then fermented at about 28-32 °C. The post ferment time is from three to 10 days before the wine is pressed off. The wine is then held in both tank and barrel for 8 months, undergoing malolactic fermentation, before being blended for bottling. This is a seductive Pinot Noir with ripe dark plum, red berry, cherry, fresh herb flavours on the palate with a kiss of smoke and spice to round off the finish. - Community Wine Reviews
