From the Niagara wine region, this sparkling wine is creamy, rich and layered on the palate. Blanc de blancs means that this was made only from white grapes, in this case, Chardonnay. This bubbly holds its own against Champagnes that much more expensive. Mad in the traditional method, this bubble spent an impressive 60 months on its lees. Crisp and mouth-watering with clean green apple, citrus grapefruit skins and mineral flavours on the palate matched with vibrant acidity. Pair with smoked salmon or oysters. Henry of Pelham Family Estate has been owned and operated by the Speck family since 1988.

Bake shop pastries with hints of nutmeg float up in the glass. The palate has very nice structure and balance. It is a bit more savoury than the nose might suggest with ginger and juicy, ripe red apple. This has nice weight and would pair nicely with party food or main courses. From Short Hills Bench wine region, Henry of Pelham Cuvée Catharine Carte Blanche Estate 2015 is a traditional method bubble made from 100% Chardonnay wine grapes (Blanc de Blanc). An all-time crowd-pleaser, creamy, rich and layered on the palate with lemon pie, baked break, leesy mineral flavours on the palate with ultra-balanced acidity.
