A New World-style Chardonnay-fresh and perfumey. Showing bright buttery, citrus, toast, nuts and pineapple flavours, with slight touch of smoke, Wonderful creamy mouthfeel. Made from hand-picked grapes and using native wild yeasts during fermentation, adding distinctive flavours and more complexity to the wine.

What a Chardonnay for the price, with natural wild yeast and mostly new French oak. This could easily taste like a Chard at twice the value. From a family run company that is well ahead of the trend of producing elegant wines that are expressions of terroir and refined wine-making.

Aromatic and big on the nose. Creamy and filling mouthfeel. This Chardonnay from the Casablanca region spent 12 months in medium toasted French oak; some of which was new. Native wild yeasts are used during the fermentation process and in keeping with this wine's completely natural identity. This is a full-bodied white wine bursting with pineapple, banana peel, toast, butter, fresh apple, honey with a lingering toffee butter finish. Refreshing acidity cleanses and entices another sip. Weightier white meats would pair well. Example: roasted pork with apple sauce and roasted turkey.

I'm generally not a big fan of oaked Chardonnay, but this wine is an exception. It spends 12 months in French oak barrels, but is also fermented using only wild yeast, meaning that which happens to occur naturally in the area. The result is a balanced Chardonnay that has the lightly toasted aromas from the oak, (including a hint of marshmallow) and a tart apple aroma that is almost tangy, presumable from the wild yeast. The two work together very nicely creating a very pleasant wine with a silky mouth feel. Perfect for a creamy lemon pasta dish.

Elegant to the last, this New World Chardonnay from the Casablanca region is ripe, crisp, and refreshing with flavours of tree fruit, and pineapple. Its mouth-coating body enhances the long-lasting palate to display judicious oak flavours of toast and slight buttery notes which complement the ripe fruit.
The wine's label image has an image of microscopic yeast - Wild Ferment - reminding us of the pure varietal character of this wine.
Pair with seafood pasta, grilled chicken, or pungent creamy, cheeses.
Drink now, or cellar through 2019.
