This single vineyard Chilean Cabernet is full-bodied with black fruit and dark chocolate notes with a minty hallway. Needs some cellar time then decant for 2 hours. Pair with hearty meat dishes. It finishes with aromas of clove, mint, and blackberry. Pair with grilled hamburgers.

Cabernet Sauvignon food pairings: braised beef dishes, turkey, soft cheese, roasted pork, lamb.

Heather Wall - CS; WSET Advanced rated this wine as 89/100 with the following review:

An inky deep ruby colour greets you in the glass. This full-bodied Chilean Cabernet Sauvignon has spent 12 months in new French oak and will reward you with a little more time in the bottle. Sweet blackcurrant, blackcurrant leaf, black cherry, ripe berries, clove, chocolate, leather, cedar aromas and flavours. Drying tannins so suggest decanting at least 2 hours. Medium+ acidity. Serve with grilled red meats on the medium-rare side. Very good fruit driven finish. I'd like to save a bottle and taste in 5 years. Good value at $18.

The 2012 vintage of the Chilcas Cabernet Sauvignon was matured for 12 months in French oak barrels. The Cabernets grapes for this wine all come from a single vineyard and are estate grown. - Community Wine Reviews
