From Jean-Bernard Saby & Fils, Château Guillou 2021 is an excellent value Montagne Saint Émilion, Bordeaux at $23. Dry, full-bodied and Merlot-driven with 20% Cabernet Franc, it is rich with red berry, dark berry and plummy flavours, savoury on the palate. Tannins are grippy and if having tonight, decant it for one hour prior to pouring it with a well-marbled rib steak from the grill. Or, wait until 2026 when the wine begins to show its very best. Drink through 2032.

Food pairings: pepper steak, meat fondue, veal liver and onions.
