A vibrant sparkling wine from Niagara-on-the-Lake with aromas of white peach and freshly baked bread. Winemaker Amélie Boury created a rich and satisfying bubbly made from Chardonnay grapes (blanc de blancs). Pair with seafood or potato chips.

Blanc de Blancs Sparkling food pairings: grilled chicken, smoked fish, watercress and cold turkey sandwiches, smoked whitefish on baguette.

Toasty pastry notes on the nose. There is a touch of anise amid the lively mousse on the palate. Light and lively and slightly racy. Try it with light cheeses. Tasted June 2019.

A clean and pure bubbly with varietal characteristics of apple and lemon accented by mild yeast and brioche. Extra dry and crisp sporting racy acidity. Autolysis picks up more on the palate in terms of flavour concentration, impact, and texture, without hiding the crisp fruit notes. Very fresh, pair this sparkler with seared white fish, raw shellfish, or fried vegetable dishes.
From Niagara-On-The-Lake wine region, Château des Charmes 2015 Blanc De Blancs is made in the traditional method, a vintage bubble produced solely from estate-grown Chardonnay wine grapes. Bright, crisp and dry, the mousse fairly dances across the palate with creamy red apple, nutty, leesy and vanilla flavour on the palate. So easy to enjoy on its own, or pair with seafood canapes. - Community Wine Reviews
