Aromas of wet stone and lime, with bracing acidity but you will embrace it just as it embraces you and all your senses. Liquid gorgeous. Cave Spring reigns when it comes to all styles of Niagara Riesling. Sublime and divine. Pair with fresh white fish.

Riesling food pairings: roast chicken, grilled chicken with lemongrass stalk, spicy pasta dishes, turkey.

A very nice example of Niagara Riesling. Light and refreshing with some racy acidity and all things Niagara. Niagara tree fruit, Niagara Escarpment minerality, tree fruit blossoms, lemon and slight petrol. The palate leans more toward oxidized apple and pear,steely minerality and apple juice tin(weird, I know). The finish on this dry white wine is long and floral. Really enjoyed this Riesling. SErve well chilled. Pair with spicy dishes, fried foods or on it's own.

The vines for this classic Niagara Riesling are planted on the terrace of the Niagara Escarpment overlooking Lake Ontario known as the Beamsville Bench in the Cave Spring Vineyard. This white is produced from the oldest, lowest yielding vines that the winery owns to produce the most concentrated and complexly flavoured wines. - Community Wine Reviews
