A superb Niagara white wine or the money. Cave Spring is the Riesling master and it shows in this value-priced edition. Aromas of wet stone, dry peach and lime zest. Clean and crisp with no oak. Pair with fresh seafood.

Riesling food pairings: goat’s cheese appetizers, sushi, raw oysters, marinated grilled vegetables, pan-seared trout, perch or salmon, vegetarian pastas, breaded seafood (sole or cod), charcuterie, lemon-braised chicken.

Brilliant pale yellow with aromas of white peach, lemon zest, minerality and a touch of white flowers. The taste is lemon and tart yellow apple, with zippy acidity. This is a great example of Ontario Rieslings, and a great "standby" wine for guests.
Showing great concentration, the nose exhibits intense aromas of ripe pear, white peach and lime-citrus, complemented by delicate floral notes. Dry in style, the palate shows complex citrus and green melon fruit up front, with outstanding middle palate weight and an accent of white pepper. The wine’s focused fruit carries through to a very bright and persistent finish. Dry but not austere, this vintage stands out for its balance of vivacious fruit, full extraction and rich texture.
