This sparkler is made from the Gamay grape in the ancestral method – the oldest method of producing sparkling wine – where the primary fermentation is stopped before completing, and a secondary fermentation occurs in the bottle, ceasing when the yeast depletes the supply of residual sugar. This sparkling wine is juicy and jammy, with notes of strawberry, cooked cherry, and plum, combined with subtle bubbles, and a pleasant earthiness. It’s a unique wine, and interesting when paired with a variety of desserts, as long as they are not overly sweet.
How about a sparkling Gamay from the Beaujolais wine region? Boisset Jcb French Kiss is just that and made in the Ancestral method, which was the very first technique for producing sparkling wines and involves a primary fermentation that is arrested prior to completion of fermentation with the secondary fermentation in bottle. Look for juicy red berry, earthy notes and peppery flavours on this lively sparkler. - Community Wine Reviews
