Beautiful Riesling from some of Cave Spring's oldest plantings. Aromas of clementine, peach, petrol, white florals, and lime pith. Medium bodied, smooth with some bright acidity, lovely lemon and citrus fruit on the palate, with more petrol and stony minerality on the finish. Refreshing and so flavourful. Enjoy with halibut or other rich white fish dishes.

On the nose, aromas of crunchy green apple, peach, floral notes, cinnamon and limestone. It is dry, crisp, and tart on the palate with Macintosh apple flavours, peach, lemon, and loads of minerality plus a beautiful nutty finish. Yum!

Taste of Ontario 2019 @ Ottawa: Pale lemon, medium bodied, crisp and dry with a moderate nose. Tangy citrus aroma, with some floral notes, lanolin and wet stone. Flavours of tart apple and citrus pith, enhanced by the delicious tang from the indigenous yeasts.

Taste of Ontario 2018 @ Ottawa - My favorite Riesling of the event. Beautiful lychee, floral aromas. On the palate, it's dry and has good minerality and acidity.

Cave Spring CSV Riesling 2016, Beamsville Bench, Niagara Escarpment, Ontario V.Q.A., Canada: Cave Spring is known for its clean and crisp white wines from the Niagara Escarpment wine region in Ontario. This Riesling, CSV (2016) is a classic with petrol, flint, white flowers and lemon cured. Fantastic acidity with great balance and longevity. Drink now with a pork roast. But, the wine is young right now and could cellar for five years to further develop and marry all of those flavours. It certainly has the fruit and acidity to sustain it. Year after year, Cave Spring is the Riesling Master of Niagara. Petrol, wet stone love. Racy acidity for seafood and anything that pleases your palate.
