Bright red fruits like raspberry, cherry, and cranberry combine with savoury herbs and a whiff of smoke in the bouquet. Good balance of body, acid, and tannin makes for a versatile wine that will stand up to bigger dishes without overpowering lighter fare. Juicy fruit and herb flavours with a subtle oak influence. Predominantly Cabernet Sauvignon and Cabernet Franc with a splash of Merlot. Top notch pairing for pizza, pasta, and burgers.

The conspiracy is a blend of Cabernet Franc, Cabernet Sauvignon and Merlot that have been prepared in the apasimento style (a fancy Italian word meaning the grapes were dried out before being fermented with concentrates the sugars and flavours). It has aromas of black cherry, blackberries, cassis, plum and dark chocolate. It is full bodied with well balanced acidity and tannins & has flavours of dark red fruit and mocha with some subtle smoke and spice. This will pair well with grilled red meats. Tasted on August 26, 2018.

The Foreign Affair Winery The Conspiracy Cabernet Sauvignon 2015, Niagara Peninsula, Ontario VQA, Canada: Full-bodied and tannic with dark fruit and a meaty, savoury mid-palate note. The winery concentrates the flavour of the cabernet sauvignon grapes by using the ripasso method traditionally used in Veneto, Italy: dried grapes add richness and depth to the wine.
