Traditional method sparkling, made from Chardonnay grapes fermented and aged in neutral oak before being bottled in Spring 2011. Disgorgement took place in Spring 2016, five years later. Creamy and autolytic, textured with a fine mousse. All about the green apple, lemon, and dough aromas. This outstanding bubbly took home a platinum medal at the 2017 Decanter world wine awards. Save for a special occasion, and serve with oysters, cheeses, or bacon cheddar shortbread.

Fresh, balanced and brilliant. Granny Smith Apple, zesty with a hint of bread dough. A wonderful Canadian cool climate Chardonnay dominant bubbly. Paired well with a Canadian maple bacon, ham and pineapple thin crust pizza. Tasted The 2010 vintage June 2017. 90 points. BespokeTastings

Flat Rock Riddled Sparkling 2010, Twenty Mile Bench, Niagara Escarpment, Ontario V.Q.A., Canada: Clean, crisp Ontario sparkling wine with a refreshing finish. Notes of green apple and stone fruit. The beer-bottle crown cap allows the bubbly to continue to develop flavours and bubbles (just as they do in Champagne before finally sealing it with the mushroom-shaped large cork).
