“Riddled” was the first bubbly, by Flat Rock Cellars, to be closed with a "crown cap" or an old-style pop bottle/beer cap. This wine has vibrant aromas of citrus, apple, mild biscuit/cracker, and freshly toasted bread. Fine effervescent bubbles, notable bitterness, crisp acidity, and tart with notes of lemon, apple, ripe pear, and some shortbread on the palate. Good length with lovely texture and tastes lemony/apple on the finish. This wine is food-friendly - so pair with nearly anything. However, this will be exceptional with roasted chicken with thyme/herb rub, creamy tarragon-infused pasta or grilled seafood. Suggestion - keep it well chilled. [Tasted Mar/2017 at Taste Ontario!]

This fabulous traditional-method bubbly spends a minimum 5 years on its lees, which lends beautiful brioche/biscuit aromas. On the palate, the texture is creamy, yet the bubbles are quite fine. I got a candied ginger on the palate, but Serge gave me a strange look when I said that, so who knows. My bizarre palate also revealed notes of almond, green apple, citrus and whiteflower. Perfect for your next special occasion!

Made from hand-picked grapes, a medium-bodied sparkling wine with delightful white tree fruit, brioche and hint of lemon aromas. Yummy apple pie on the palate with refreshing acidity and fine, persistent mousse.

The traditional method, attention to detail, and 5 years on the lees is paying off with this sparkling. Ontario should be proud of this livey, subtley yeasty sparkling. A creamy palate with an acid backbone. A very elegant sipper. Think puff pastry hors d'oevres and paté with toast points. Tasted March 2017
